Description
The espresso brewing process used in lever espresso machines from the Graef brand dates back to 1901. Finely ground coffee (about 6-7 g) is extracted in the device under high pressure (around 9 bar) for 25 to 30 seconds (water temperature varies from 90 to 96°C depending on the device settings). For lever machines, the ground coffee is manually placed into a removable filter basket and tamped down — this process is called "tamping." The foundation for making a good espresso is the so-called 4 M's principle:
1. Mixture (Miscela) - selection of coffee beans.
2. Grinder - a good grinder that always grinds fresh coffee, such as the CM 702, CM 800, CM 802, or CM 900.
3. Machine (Macchina) - an appropriate device that generates optimal water pressure.
4. Barista's hand (Mano) - prepares the espresso and adjusts the other three factors to suit.
