Description
The Japanese Shotoh knife from the Miyabi 5000MCD 67 series will make an elegant addition to your kitchen. It features a 13 cm blade, a distinctive handle design, and a characteristic Damascus pattern on the blade. The polished black ash wood handle has a similar grain to the blade. The Shotoh knife is perfect for slicing and peeling fruits and vegetables.
The blade of this ice-hardened (CRYODUR®) knife consists of 133 thin layers. These layers encapsulate the core of MicroCarbide MC66 steel. During manufacturing, the blade undergoes a special hardening process to ensure a hardness of 66 on the Rockwell scale, providing excellent stability and a sharp edge. The knife's tip is sharpened to a fine point using the Honbazuke technique, a traditional Japanese process where both sides of the blade are honed and polished in three different ways.
The knife features a D-shaped handle, allowing the blade to move swiftly and precisely through food, regardless of the cutting technique used, and preventing fatigue during extended use. It also has a balanced weight distribution between the handle and the blade.
